Maple Glazed Salmon with Balsamic Macerated Strawberries
As soon as the last snow melted, baseball/softball season began, and with two kids on teams, our weeknights are jam packed with games and practices. To eat a homemade dinner as a family, I have to plan way ahead of time and put my crock pot on overdrive. On gorgeous spring days, I don’t want slow cooked dishes: I crave fresh flavors. Quick roasting a nice piece of fish and topping it with some macerated fruit is a nice alternative. This maple glazed salmon comes together in 15 minutes flat, and it leaves me feeling great and full of energy.
The maple syrup gets a nice sweet crust from the maple syrup and the sweet and sour strawberries make this a restaurant level dish. Roasted salmon can be boring, even when brushed with maple syrup, but topped with unexpected fruit, it’s impossible to not get excited about it.
Salmon filets for dinner will most likely require a special trip to the supermarket, but it’s well worth the hassle. You’ll be dreaming of the fresh and exciting dinner you’re about to whip up beginning with the fourth inning.

Maple Glazed Salmon with Balsamic Macerated Strawberries
This maple glazed salmon comes together in 15 minutes flat, and it leaves me feeling great and full of energy.
Ingredients
- 2 Salmon Fillets, ⅓ to ½ pound each
- 1 cup of fresh strawberries, cut into quarters
- ¼ cup of good quality balsamic vinegar
- 2 TBSPs of maple syrup
- 1 lemon
Instructions
- Preheat oven to 400 degrees Fahrenheit.
- Wash and cut the strawberries, place in a bowl and top with balsamic. Stir well to coat.
- Rinse the salmon fillets and pat dry. Place in a Pyrex or other oven safe dish.
- Brush each fillet with maple syrup.
- Bake in oven for 10 minutes. Remove salmon. Brush maple syrup copiously on top. Turn the oven to broiler.
- Broil the salmon filets for 5 minutes, until a nice crust develops.
- Plate and serve with strawberries on top and with squeezed lemon juice.
